Flavio De Castilhos dreamed of making world class cheese in the beautiful high desert climate of Bend, Oregon. After a successful career in high tech, he relocated his family and launched a farmstead cheese operation, Tumalo Farms. Using milk from the farm’s herd of Saanen and Alpine goats, a small team of cheesemakers handcrafts an array of aged Gouda style cheeses and a new goat and cow milk ripened cheese called Jewel.
